After training for over 20 years at fine dining institutes such as The Ledbury in London and Sydney restaurants Sepia, Quay and the Bathers Pavilion, Nicholas Hill turned his efforts to a small pub in the backstreets of Woolloomooloo.

Hill spent a year cooking a refined style of British pub food to much acclaim at The Old Fitzroy Hotel before departing to open a small company producing Hot Smoked Eels out of the Hawkesbury river.

Nicholas recently teamed up with Restauranter Nino Zocalli to open The Milan Cricket Club pop up steakhouse in the famous Strand Arcade in Sydney’s CBD which will run until Christmas 2020.
