In 2012, distiller Paul Messenger began experimenting with the curious colour changing properties of an exotic flowering legume from Thailand known as the Butterfly Pea (Clitoria ternatea).

He spent the next three years assessing a wide range of botanicals including native Australian bush tucker before settling on a balanced recipe of 12 botanicals in perfect harmony with the flower.

The result would turn the most traditional spirit upside down.

Ink Gin is a premium dry gin made with 13 organic botanicals, including a mix of traditional and Australian natives. Like all true gins, juniper berries are the largest botanical component, however the defining character of Ink Gin comes from the second tier botanicals led by locally grown lemon myrtle leaf, coriander seed, Tasmanian pepper berry and freshly peeled sundried sweet orange peel.

We make rum from the finest quality, freshly crushed cane juice grown on our farm, an approach known as the French-style or Rhum Agricole.

When you taste our rum, you will discover a body and character unlike traditional molasses rums. Take Pure Cane, our unaged agricole and our most pure expression. This sparkling, crystal clear liquid exhibits an unparalleled freshness with herbal and floral aromas, light and fruity with sweet sugar cane and citrus notes and a well-balanced, pastrie finish.
