As part of the Taste of Sydney Dining Experiences program presented by Diners Club, Sydney’s nel. Restaurant will play host to Simon Davies, the ex. Executive Chef of Chicago’s three-Michelin starred Alinea restaurant, for one night only on Thursday 20 February. 

Nelly Robinson and Simon Davies met on the set of the World’s 50 Best Restaurants in Singapore in 2019. Their shared beliefs around the importance of creating unique dining experiences brought the two chefs together, with the pair agreeing to collaborate on a ‘once in a lifetime’ dining experience at nel. Restaurant as soon as possible. 

The dinner at nel. Restaurant will be Davies’ first global appearance after announcing he will be leaving Alinea in 2020. 
Alinea has been named the Best Restaurant in America three times and is the only restaurant in Chicago (and one of only 12 in the US) to earn the highly coveted Michelin three-star rating. Davies joined Alinea as an intern in 2019 and was awarded the coveted role of Executive Chef after Mike Bagale stepped down in May 2018.

Like Robinson, Davies believes dining out is about the entire experience, whether that be through the music played during the meal or the use of bespoke ceramic dining wares.   

Davies says, something that I have always been drawn to about the culinary world is the ability to make deep connections with people from all over the planet. I am grateful to have made such a connection with Chef Nelly Robinson of nel. and am honoured to travel to Sydney to cook a dinner alongside him. 

Echoing this sentiment, for Chef Robinson, it was a no-brainer to invite Davies to cook in his kitchen as part of the Taste of Sydney Dining Experiences program. 

To have a chef of Simon’s pedigree coming to nel. really highlights what we’re trying to do here. When I met Simon at World’s 50, I engaged with a great chef and a human that I connected with forming a blossoming friendship. For myself, the customers and my team we cannot wait to have Simon in our kitchen showcasing his unique style.

$195+ $3 booking fee per person includes an 8 course degustation and Sapporo beer. Wine pairing will be available on the night at an additional cost.

Due to the nature of the event, we are unable to cater to dietary restrictions or allergies. Tables will be shared and guests may be seated next to another party.
