Sydney chef-couple Ben Sears and Eun Hee An have opened their next restaurant venture Paper Bird, much to the delight of Asian cuisine lovers throughout Sydney.
The pair met while working together at Sydney restaurant Claude’s, where Ben was a head chef under Chui Lee Luk. With an extensive professional culinary history ranging from Melbourne at Cutler & Co and Three One Two, to L’Enclume in northern England, this latest venture follows on from Moon Park.
Drawing on her time spent with her Grandmother, learning the intricacies of Korean food in Gyeong-ju and Ulsan, Paper Bird food is founded on the tastes & techniques learnt in her childhood. Inspired to seek out further training, Eun joined the kitchens of Izakaya Fuijiama and Glass honing her techniques and skills before joining the team at Claudes.
Set within the old premises of the former Bourke Street Bakery on Crick Avenue, Paper Bird showcases a skilled take on modern Korean and southeast Asian cuisine with culinary influences from China, Japan and Taiwan.
